North by Northwest makes an amazing pulled pork BBQ sandwich. It’s an open-faced BBQ sandwich topped with a salsa of mangos, tomatos, and capers. I don’t typically think of fruit or salsa when I think of BBQ, but I love the combination! So, when I was thinking about making another dish with a mango salsa, the thought occurred to me that perhaps I could create a reproduction of the NXNW sandwich. My version doesn’t taste quite the same (especially since I was out of capers for the salsa) and should definitely not be taken as representative of the NXNW sandwich (you really should try it for yourself), but it was very delicious and fairly easy to make (as long as you don’t mind chopping veggies).
Pulled Pork BBQ Sandwiches with Mango Salsa
Ingredients: pre-made refridgerated BBQ pulled pork, flat bread (1 slice per sandwich), 2 large mangos, 2 roma tomatos, 2 serrano peppers, 1/4 red onion, 1/3 C cilantro, salt, lime juice
- Chop mangos, tomatos, red onion, cilantro, and serranos to the size of your liking. I’d suggest chopping the serrano peppers as finely as possible so their flavor spreads throughout the salsa better.
- Mix chopped ingredients. Add lime juice and salt to taste.
- Lightly toast flatbread, meanwhile heating pulled pork according to package instructions.
- Top flatbread with pulled pork, then mango salsa.
