Experimenting with Leftover Ingredients

This evening, Corwin and I decided to cook pork, and I decided I wanted to use up a few leftover ingredients from other recipes to create a topping for the pork. It turned out to be a fantastic experiment, because the result was delicious! We tried it with pork cooked two different ways: one using Tony Cacheres seasoning and fresh basil, and the other using just salt and pepper and fresh basil. Corwin loved the sauce combined with the Tony Cacheres pork. I liked it that way, but I preferred it with the salt and pepper pork, as that allowed me to taste the basil more. Either way, it was delicious!

Basil Tomato Cheese Sauce over Pork

Ingredients: 1 tomato, diced in large pieces; 1/2 pack of fresh basil, sliced roughly; 1/2 pack of fresh sliced mushrooms; 1/3 bag fresh spinach; Olive oil; 1C Italian shredded cheese blend; Coarsely ground black pepper; Salt
  1. Sauté mushrooms and basil in olive oil.
  2. Add tomatoes and spinach.
  3. Lightly salt and pepper.
  4. When spinach has cooked down and tomatoes are softening, add cheese and more olive oil to ensure cheese won’t harden too much when cool.
  5. Serve hot over sauteed pork.
