Corwin and I wanted to cook dinner tonight but didn’t want to make a trip to the grocery store. Fortunately I had bought a can of black beans on a whim a couple weeks ago, figuring we’d find something to do with them. We ended up making a spin on a friend’s recipe, adding a few spices and substituting black beans for dirty rice.
Southwestern-Style Chicken and Black Beans
Adapted from Chelsea’s recipe
Ingredients: olive oil, 1 clove minced garlic, paprika, cayenne pepper, cumin, diced chicken breast, 1 can black beans, 5 slices pepper jack cheese, salsa
- Saute chicken in olive oil, garlic, and spices.
- When chicken is done, turn the heat to low, then add black beans and top with pepper jack cheese and salsa.
- Cover until cheese melts, then serve.
