Southwestern-Style Chicken

Corwin and I wanted to cook dinner tonight but didn’t want to make a trip to the grocery store. Fortunately I had bought a can of black beans on a whim a couple weeks ago, figuring we’d find something to do with them. We ended up making a spin on a friend’s recipe, adding a few spices and substituting black beans for dirty rice.

Southwestern-Style Chicken and Black Beans

Adapted from Chelsea’s recipe
Ingredients: olive oil, 1 clove minced garlic, paprika, cayenne pepper, cumin, diced chicken breast, 1 can black beans, 5 slices pepper jack cheese, salsa
  1. Saute chicken in olive oil, garlic, and spices.
  2. When chicken is done, turn the heat to low, then add black beans and top with pepper jack cheese and salsa.
  3. Cover until cheese melts, then serve.
