OK, so these two recipes are actually cookies that a friend and I baked and mailed for Easter two years ago and I never got around to posting on the blog, but after writing about the soft chocolate chocolate chip cookies I was in the mood to write another post about cookies that are good for mailing. After all, it’s just about that time of year for mailing holiday cookies. :)
My verdicts on these: Both were absolutely delicious. And both mailed well, although the cranberry cookies stayed better longer than the caramel ones. The caramel ones, however, taste like they’re straight out of the oven again if you heat them in the microwave for about 10 seconds. Wonderful caramel gooeyness.
Cranberry, Orange, and Dark Chocolate Chip Cookies
- We followed the recipe exactly. It was delicious.
- These were very easy to make.
Caramel-Filled Chocolate Cookies
- We used Rolos as the caramel-filled chocolate candy inside the cookie. I was a little concerned about whether it would make the cookie stay too tall and round, but these cookies don’t really hold their shape, so they flattened out into a normal thick cookie.
- We followed the recipe exactly. These cookies are easy to make and delicious.
